In a medium bowl, cut open avocados, remove seed and with a spoon, carve out the flesh. Using a fork, mash up all three avocados. Next add the chopped tomato, red onion, lime juice, garlic, salt, and coriander. Using a spoon, mix until blended. Serve or store in the refrigerator. The lime will preserve the avocado from browning, it will usually be good for up to two days.
