Buffalo Chicken Spinach Dip

  • 8 Ounces Cream Cheese (organic if possible)
  • 1 Cup Cheddar Cheese, shredded
  • 5.3 Ounces Greek Yogurt
  • ¼ Cup - ½ Cup (depending on how hot you like it) Hot Sauce
  • 1 Pound Shredded Chicken
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Dash Salt
  • 1 Dash Pepper
  • 3 Cups/6 Ounces Spinach
  • 1 Cup Blue Cheese Crumbles (optional)
  1. Baking: Preheat oven to 375 degrees.
  2. Soften cream cheese.
  3. In a medium baking dish, add cheeses, yogurt and hot sauce.
  4. Stir until mixed well.
  5. In a medium frying pan, add 1 Tbsb. Olive Oil and chicken.
  6. Cook till brown on both sides.
  7. Remove and shred with two forks to pull apart into pieces.
  8. Add chicken to cheese mixture.
  9. In the same frying pan, add 1 Tbsp. Olive oil and spinach.
  10. Using a spatula toss until covered with oil. Stir frequently and cook until wilted.
  11. Add spinach to cheese and chicken mixture. Mix well and place in oven for 15-20 minutes. Optional: Top with Blue Cheese Crumbles.
