Buffalo Chicken Spinach Dip

- 8 Ounces Cream Cheese (organic if possible)
- 1 Cup Cheddar Cheese, shredded
- 5.3 Ounces Greek Yogurt
- ¼ Cup - ½ Cup (depending on how hot you like it) Hot Sauce
- 1 Pound Shredded Chicken
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Dash Salt
- 1 Dash Pepper
- 3 Cups/6 Ounces Spinach
- 1 Cup Blue Cheese Crumbles (optional)
- Baking: Preheat oven to 375 degrees.
- Soften cream cheese.
- In a medium baking dish, add cheeses, yogurt and hot sauce.
- Stir until mixed well.
- In a medium frying pan, add 1 Tbsb. Olive Oil and chicken.
- Cook till brown on both sides.
- Remove and shred with two forks to pull apart into pieces.
- Add chicken to cheese mixture.
- In the same frying pan, add 1 Tbsp. Olive oil and spinach.
- Using a spatula toss until covered with oil. Stir frequently and cook until wilted.
- Add spinach to cheese and chicken mixture. Mix well and place in oven for 15-20 minutes. Optional: Top with Blue Cheese Crumbles.
