Skinny Fruit Pizza Recipe
Preheat oven to 375 degrees. First make the shortbread. In a medium mixing bowl, combine flour, white sugar, butter, coconut oil and baking soda. Using a hand or stand mixer, mix on high until you get a cookie dough texture. Add a pinch more flour if needed. In a 13×9 lightly greased baking pan/dish, spread the dough evenly to cover the bottom of the pan. Place in the oven for 20-24 minutes. While crust is baking, make the icing. In a medium mixing bowl, combine cream cheese, greek yogurt, vanilla, honey and powdered sugar. Using a hand or stand mixer, mix on high until you get a creamy fluffy texture. Set aside. When shortbread is done, let cool for 5-10 minutes, then spread cream cheese icing on with a spatula. Top with blue berries and sliced strawberries. Let cool in the refrigerator for icing to harden, or serve immediately if desired.
