A classic salad made healthier with kale! Try this Kale Caesar Salad to add to your next Italian dinner meal.
If you follow my blog you know I love kale. I’ve made kale chips, pasta salad with kale, roasted it, sauteed it and made many different salad combos but it wasn’t until I tried it in a caesar salad at a restaurant that I was hooked on this Italian dinner favorite!
About the Ingredients
I searched around for a healthier dressing option and landed on Giant’s Nature’s Promise brand, which is made with greek yogurt and has only 70 calories and 8 grams of fat per 2 tablespoons!
I also added sliced almonds for added crunch and avocado, because why not!? Avocados are full of healthy fat and blend wonderfully with the creamy caesar dressing. Then for a final zing, squeeze a little fresh lime over top and you have a souped-up caesar salad!
Kale is considered a superfood for its nutrient dense makeup. Vitamins A, K, B6 and C are all found in this mighty green along with calcium, potassium and magnesium. Prepared well, this can be a healthy and tasty addition to your diet.
How to prepare Kale?
People that don’t like kale, probably haven’t had it prepared right. When you make any kale salad make sure to pre-dress the salad to soften the leaves. Add the desired amount of dressing and toss with your hands to cover all the leaves. Let sit for about 10 minutes and you have perfect kale! Not too crunchy, not too soft. When you purchase kale, make sure it is firm and crisp, not withered and soft.
Kale Caesar Salad Recipe
- 6-8 Cups Roughly Chopped Kale
- ⅔ Cup Caesar Dressing (low fat Nature's Promise Brand)
- 1 Avocado, peeled and chopped
- ½ Cup Chopped Almonds
- ½ Cup Croutons
- ½ Cup Parmesan Cheese, Shredded
- Lime Squeeze, to taste
- Chop kale and add to medium/large bowl. Add dressing and mix with serving utensils or hands to make sure all the leaves are covered. Let sit for 10 minutes. Add Avocado, chopped almonds, croutons, parmesan and lime juice. Serve right away.
